CHEF MIKE: Hello everyone. I’m Chef Mike and I am glad you here for Simmering with Meaning, where food is more than nourishment, it is metaphor. I am especially excited about today’s show. Today, we are going to go over a very important but commonly misunderstood part of seasoning: the use of salt. For those of you who like to fall asleep to sound of your arteries hardening, this show is for you! Salt has known to be in use since 8000 B.C. As long as humanity has been on the planet, salt has been in use. You may ask why? Well interestingly enough, we cannot live without salt. The human body, as well as animal bodies, does not manufacture sodium or chloride. So, we must take in salt to sustain our life and health. With salt being in use for so long, it makes one wonder why the salt shaker wasn’t invented until 1858. Personally I think it might have been one of the causes of civil war. Prior to the mid 1800’s, salt was presented in a bowl-like holder made of ceramic or wood for easy access. In the Middle Ages, when utensils and fast food were in short supply, we find the use of the salt finger… You would keep one of your pinky fingers clean so you could dip it in the salt bowl. Yes, double dipping was allowed. Now, let us turn our attention to these beauties. Today, we have two magnificent pork loins. Don’t they look great? For those of you which may be more theologically sensitive, I assure you that these in and of themselves do not constitute the abomination that causes desolation even after they have been cooked. With me in charge, they may end up more like burn offerings but be that as it may. So let’s get ready for some insights in the proper use of salt, but first a word from our sponsor.
